Consider including Iceland to a longer trip either to Europe or the US. Local Icelandic airlines offer free stopovers up to a week to travelers.

Food.
Restaurants are expensive in Iceland, so you might not want to eat out every day. Most travelers shop at locl supermarkets and make lunch in the go. Think about bringing reusable plastic oiu. pouches for sandwiches, a water bottle and a lunch box to easily carry your food around.
Visiting in winter
It is definitely possible, as it is what we did. Few things to keep in mind:
You won’t be able to see iceberg, Jokulkarson glacier closes in the winter
You night need to cancel some planned visits because of the weather
You will need studs on your shooes to walk on the ice
Lots of restaurants will be closed outside of the capital
Prices will be lower than usual
